Breakfast Bowl with Salmon & Avocado

Eggs, cherry tomatoes, broccoli, avocado, and salmon in one beautiful morning bowl. Proof that breakfast doesn't have to be boring.

Ingredients

  • 2 eggs (fried or poached)
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets, steamed or roasted
  • 1 ripe avocado, sliced
  • 3–4 oz smoked or fresh salmon
  • Olive oil, salt, pepper
  • Everything bagel seasoning or red pepper flakes
  • Fresh dill or chives (optional)

Instructions

  1. 01

    Roast cherry tomatoes with olive oil and salt at 375°F for 15 minutes, or use fresh.

    Steam broccoli until tender-crisp, about 4 minutes.

    Cook eggs to your preference — a runny fried egg works beautifully here.

    Arrange everything in your big white bowl: broccoli, tomatoes, avocado, salmon.

    Place egg on top.

    Season with everything bagel seasoning or red pepper flakes and a drizzle of olive oil.

Erica's Note

This bowl is as good for a weekend brunch as it is for a weekday power breakfast.
